Weekly Meal Plan Ideas for July 11th-15th

Healthy eating throughout the week just comes from a little prep on Sunday. I’ll typically start planning for the week’s meals on Sunday afternoon and schedule a grocery pick up for Monday. By planning and scheduling ahead, my weeks are so much smoother when I don’t have to fret about what to make my family last minute and we end up eating so much healthier. It’s one of those plan ahead tricks that is worth it every week and I’m always so glad I took the time to do it.

Since it’s hot out, the recipes I chose this week are all about keeping the oven off as much as I can. It’s all about grilling in the gorgeous summer sun this week with a fresh summer side. So fire up the grill and let’s check out next week’s dinner schedule.

Pantry

  • Olive oil
  • Pepper
  • Salt
  • Red Wine Vinegar
  • Honey
  • Dried Oregano
  • Dijon Mustard

Produce

  • Mixed Salad Greens
  • Watermelon
  • Blueberries
  • Red Onion
  • 2 Packages Feta (good for 4 salads)
  • 2 Limes
  • Mint
  • Garlic
  • 5 Large Tomatoes
  • 2 English Cucumbers
  • Red Onion
  • Parsley
  • Cilantro
  • Blueberries
  • 4-5 Peaches (good for two salads)
  • 2 Lemons
  • Fresh Basil for two salads
  • 4 Ears Corn
  • 3 Medium Roma Tomatoes
  • Package of Baby Arugula

Protein

  • Chicken Breast (Enough for 2 meals)
  • Salmon (Enough for 2 meals)
  • 1 lb ground chuck for bun-less burgers

Monday: Grilled Chicken with Watermelon Salad

For Monday, I plan on making this watermelon salad and pairing it with some grilled chicken seasoned with salt and pepper from the grill. Easy, peasy!

Tuesday: Easy Tomato Cucumber Salad, Paired with Grilled Salmon

For Tuesday, I’m going to make salmon with this yummy side. The salmon will be super easy, just drizzle with olive oil, lemon juice, and season with salt and pepper, then grill. Before you know it, you have a delicious, healthy meal in no time.

Wednesday: Bunless Burgers with Blueberry Peach Feta Salad

This salad makes my mouth water! I’m going to patty up some bun-less burgers and season with salt and pepper then grill and pair the burgers with this salad. Healthy, easy, and delicious, in just a few simple steps.

Thursday: Grilled Chicken with Grilled Corn, Basil, Tomato, and Feta Salad

My friend, Lori, sent me this recipe and I couldn’t wait to try it. I’m going to make this on Thursday, paired with some grilled chicken seasoned with salt and pepper. The salad takes less than 30 minutes to make. So easy!

Friday: Peach Arugula Salad Paired with Grilled Salmon

I’m going to drizzle some olive oil, lemon juice, and sprinkle some salt and pepper over some salmon and pair with this salad for Friday’s meal. So easy and simple!
