
If you are looking for inspiration for next week’s dinner schedule for you and your family, you are in the right place!
Each week, I share a meal plan for the upcoming week that is filled with healthy recipes, and hopefully there is enough leftovers to take care of lunch the next day! The goal is to minimize time spent on the computer planning meals and cooking in the kitchen and to maximize your time enjoying your free time, while enjoying delicious food.

Pantry
- olive oil
- salt
- pepper
- red pepper flakes
- 1 box Fettuccini noodles
- 1 package butter
- honey
- Jasmine rice
- apple cider vinegar
- sugar
- 2 chipotle peppers in adobo sauce
- corn or flour tortillas
- cumin
- oregano
- ground cloves
- 3 cups corn flakes cereal , crushed (or substitute breadcrumbs)
- mayonnaise
- yellow mustard
Produce/cheese
- 2 yellow onions
- garlic
- 1 package of cherry tomatoes
- 1 package of fresh spinach
- 1 package feta cheese
- 3 limes (for several dishes, save leftovers for the weeks recipes)
- bundle of cilantro (for several dishes, save leftovers for the weeks recipes)
- 2 tomatoes
- 2 cobs corn or one package frozen
- avocado
- 2 red onions
- 1 jalapeño pepper seeded and diced
- sweet onion
- pineapple
- 1 medium spaghetti squash
- 1 red bell pepper
- 1 yellow bell pepper
- fresh parsley
- 8 oz Swiss cheeses
Protein
- 3 packages of chicken breast
- 1 Beef Chuck Roast
- 1 package hot or sweet Italian sausage (5 links)
- Thin sliced ham
Monday: Unlikely Hostess’ Feta Chicken Pasta
It’s amazing how quickly you can put together a delicious meal in a short amount of time. This recipe takes about 25 minutes and before you know it you have a scrumptious, healthy meal ready to go. I can’t wait to try this one!
Tuesday: Grilled Chicken Summer Rice Bowls
Ray and I LOVE rices bowls packed with veggies and protein. This one looks so yummy. Just chop up some veggies, cook some rice, and grill some chicken and you are ready to go! The picked onions will be used on this recipes as well as tomorrow’s so you don’t have to make them twice.
I also have a super cheap rice cooker that I love. Makes it super easy to cook rice so you don’t have to mess with the stove. Check it out below.
Wednesday: Slow Cooker Barbacoa Beef Tacos with Pickled Onion and Pineapple Pico
I love putting a bunch of stuff in the crockpot in the morning and coming home later in the day and dinner is all ready to go! I usually prep the crockpot while I’m feeding my kids breakfast and then I am done for the day. For this one, use the leftover picked onions from the rice bowls on Tuesday to save you some time. To save time in the evening, cut up the pineapple pico in the morning and refrigerate for later. Check out my video on how to quickly cut up a pineapple.

Thursday: Sheet Pan Sausage and Peppers
I love this idea! Prep a sheet pan with a bunch of delicious vegetables and some protein, stick in the oven for 40 minutes, get some things done, then pull dinner out of the oven, just a little assembly, and it’s time to eat! Talk about a delicious and filling meal, too! My friend, Lori, just gave a squash she grew in her garden (amazing, right?!) so this is the perfect recipe!
Friday: Fool-Proof Chicken Cordon Bleu

Chicken Cordon Bleu is one of my favorite recipes since I’ve been little. I love the flavor of the chicken, cheese, and ham combined. The crunch on top of the chicken is an extra bonus. Pair with some of the jasmine rice from earlier in the week and you are ready to go for Friday night’s dinner!
